As far as I know, the behavior that you're looking for (i.e. consulting the /etc/fstab file, and applying the options found there) only applies if you call mount...

To get the logic right, just minor changes are required. Use:

I ended up completely reinstalling Ubuntu (upgraded to 18.04). I know this isn't really a solution, but at least now the question can be closed.
