I have samsung atom 1.66GHZ and 2.00 GB RAM.

my hard disk is regular not an SSD, 5400rpm.

Do you think I can run a ubuntu 11.10 64bit (as dual boot) on it?

Yes, it will run, but it won't be fast (slow CPU, little RAM, slow HDD). I'd probably also try the lightweight Xubuntu and Lubuntu.
