For achieving that you simply have to remove them from /usr/share/applications. Do do so open a terminal (ctrl+alt+t) and navigate to said directory...

export is to allow subshells to inherit the variable, it does nothing to allow a subshell to change a value in the parent.

The eigen3 header files go in a subdirectory /usr/include/eigen3 e.g.
